Cooking Time: 1 hour. Makes about a dozen bars.
Ingredients
- 1 cup of pecans
- 1/2 cup of walnuts
- 1 cup of sliced almonds
- 1 cup of shredded unsweetened coconut
- 1/2 cup almond butter
- 1/2 cup coconut oil
- 2 tbsp vanilla
- 2 tbsp honey
- 1/2 cup almond meal
- dried fruit (raisins, blueberries, etc).
Cooking Instructions
Combine all nuts on a baking pan that is covered in aluminum foil. Sprinkle the coconut on top and bake at 350 for 10-15 minutes.
While they’re toasting combine the coconut oil and almond butter in a large bowl, heat until they melt.
Once the nuts are done toasting you want to chop them up in the food processor – the easiest way to do this is use the tinfoil to scoop them up. You want them to be coarsely chopped.
Add the vanilla and honey to the coconut oil and almond butter and stir. Then fold in the almond meal. Then stir in the nut mixture. Add some sort of dried fruit to taste – I did blueberries, raisins, and cranberries.
Use a large tupperware or platter to mold the bars. Just pour in the mixture and press it flat. Put in freezer until cold, about 30 minutes. Then use a spatula to break them into individual bars. Wrap in plastic wrap and voila! Keep cold for a great snack!
